I made those donuts for our New Year's eve dinner and they were sooo good!
Fluffly with a bit of crunchiness from the chocolate glaze... Just how I like them :-).
For 6 donuts:
½ cup unsweetened plant milk
1/3 cup apple sauce (unsweetened)
1 tbsp coconut oil
1 tbsp ghee
1 tsp vanilla extract
½ cup almond flour
½ cup whole wheat flour
15g coconut sugar
1 tsp baking powder
5 squares dark chocolate 85%
Preheat oven to 350° F
In a medium bowl, combine the plant milk, apple sauce, coconut oil, ghee and vanilla. Whisk until uniform.
Add the flour, coconut sugar and baking powder and fold. Add milk if needed.
Pour into a donut pan.
Bake for 18-20 minutes, until a toothpick comes out clean and the edges have browned.
Let cool a bit and prepare glaze.
Add chocolate in a bowl with 1tbsp of coconut oil. Micro-wave ~1min.
Stir until completely melted.
Dip the tops of the donuts into the glaze.
Set on a baking sheet and let glaze set up.
