Healthy Orange Madeleines


Last week I was craving orange cake so I decided to bake some orange Madeleine with my son. It’s a very simple recipe and soooo delicious. If you don’t know madeleines, it’s a traditional small cake from France. They are like very small sponge cakes with a shell-like shape.

Here is the recipe: Ingredients :

  • 90g Whole wheat flour

  • 45g Buckwheat flour

  • 45g Chickpea flour

  • 1 Tbsp baking powder

  • 1 Tbsp baking soda

  • 2 Tbsp coconut sugar

  • 2 Tbsp plain coconut yogurt

  • 2 eggs

  • 1 orange (for the zest + the juice)

  • 1 Tsp vanilla extract


Directions:

  1. Preheat the oven to 400°F (~200°C).

  2. In a bowl, combine all the ingredients except the orange juice.

  3. Mix everything together.

  4. Add the orange juice and beat until smooth.

  5. Spread the batter in a madeleine (or muffins) pan.

  6. Bake in the preheated oven for 25minutes or until lightly golden brown on top and a toothpick comes out mostly clean.

  7. Cool.

  8. Enjoy
