Last week I was craving orange cake so I decided to bake some orange Madeleine with my son. It’s a very simple recipe and soooo delicious. If you don’t know madeleines, it’s a traditional small cake from France. They are like very small sponge cakes with a shell-like shape.
Here is the recipe: Ingredients :
90g Whole wheat flour
45g Buckwheat flour
45g Chickpea flour
1 Tbsp baking powder
1 Tbsp baking soda
2 Tbsp coconut sugar
2 Tbsp plain coconut yogurt
1 orange (for the zest + the juice)
1 Tsp vanilla extract
Preheat the oven to 400°F (~200°C).
In a bowl, combine all the ingredients except the orange juice.
Mix everything together.
Add the orange juice and beat until smooth.
Spread the batter in a madeleine (or muffins) pan.
Bake in the preheated oven for 25minutes or until lightly golden brown on top and a toothpick comes out mostly clean.
