Protein Cookies


Need a breakfast on-the-go? Forget donuts and drive-thru and bake these tasty Protein cookies.


They are easy to make and will save your busy mornings.

Recipe:


Ingredients

  • 100g Almond flour

  • 100g Protein powder (here Genuine Health fermented organic vegan protein Vanilla flavor)

  • 100g Almond milk (unsweetened)

  • ½ tsp baking soda

  • 1 Organic egg (replace with flax-egg for a vegan version)

  • 50g coconut oil

  • 40g coconut sugar

  • 1 handful dried cranberries

Instructions

  1. Preheat oven to 350F

  2. Add all of the wet ingredients into a bowl and mix them until combined.

  3. Add in the dry ingredients and mix until combined and a batter has formed.

  4. Once it’s done, add a parchment paper to a baking sheet and form cookies (use your hands or a cookie scoop). Use the bottom of a spoon to flatten them on the baking sheet.

  5. Top the cookies with dried cranberries.

  6. Bake the cookies for about 15min. They should be golden brown on top.

  7. Enjoy.
