Quinoa-Omelette

Hi Everyone



When I don't have a lot of foods in my fridge or I just have no idea about what to cool (yes it happens lol), I like making Omelettes. They are so easy to do and it's like pasta, you can put everything in it, it will taste good.


Here's an idea for your child's lunch box but you can make it for yourself by adjusting the quantities. --> Feel free to use the foods you have in your fridge and/or in your pantry 😊 (leftovers are perfect for omelettes – Rice, potatoes, Babybel taste great as well)


Recipe:


Ingredients:


  • 1 Small handful of Cherry tomatoes (organic)

  • 4-5 Tbsp Quinoa (cooked)

  • 1 handful of spinach (organic)1 Egg (organic)

  • Onion

  • Cheese (2-3 slices or 4-5 cubes or 1 Babybel)

  • Salt, pepper, spices, herbs

  • Ghee (or extra-virgin olive oil or avocado oil)






Instructions :

  1. Whisk eggs in a bowl with the spices and seasonings of your choice.

  2. Add the other ingredients (EXCEPT the cheese).

  3. Mix everything together.

  4. Add a bit of ghee in a small skillet and pour the mixture.

  5. Cook for 3-4 minutes and add the cheese. Cook 1-2 minutes more.

  6. Flip. Cook for 2-3 minutes.

  7. Put in the lunch box.

  8. Add veggies or whatever you want.




Ready to eat :-).
